CURRY IN A HURRY - Adapted From my Fit5 Program
Most of you know by now that I never measure when I cook. Why? Well it stems from years of fitness competing. I obsessed about my macros/ calories in a not so healthy way. I am a self proclaimed recovering exercise and physique addict. Looking the "fitness part" became an addiction and obsession and it carried over into extreme disordered eating habits. Measuring/weighing food brings me right back into that old unhealthy mindset surrounding food. My old story of having to control every morsel that went into my mouth starts to replay itself and its not background noise...the volume goes way up! During that time in my life my love of cooking and creating delicious nourishing meals filled with love for myself and my family were numbed by my addiction to my physique. I stopped enjoying my time in the kitchen and got on the "Meal Prep Sunday" band wagon that we see all these fitness folks jumping on full steam ahead! Mass quantity joyless cooking? Nah...I'm out! None of that applies to me, my life OR my programs!
I am all about moderation NOT deprivation.

I am all about fueling your body for living your best healthiest happiest life
I am all about deep, soulful nourishment that invokes feelings of comfort and a sense of home.
I am also practical.
I am a mom of three, wife and entrepreneur and sometimes meals need to get on the table fast!
This is my comfort food. It tastes like its been simmering for hours, and I promise you will never believe my "CURRY in a HURRY" literally takes less than 15 minutes.
Now...remember I don't measure so if you are a personality type that needs exacts increments and details this post may give you a bit of anxiety, but I promise if you try to cook creatively and without controlling every single ingredient you might be surprised at not only how amazing your food tastes but how much you enjoy the process.
-Tempeh or tofu. Sometimes i use lentils (don't worry I make a chicken version also so feel free to sub the tofu for any protein source you like but this is a vegan version)
-coconut milk yep the full on fat version in the can!
-any and all veggies you love that may be in your fridge (I always use what ever I have on hand-this time it was carrots, broccoli, caulifllower, asparagus and brussel sprouts.
-Curry powder, salt and pepper, cumin and ginger to taste
-Braggs aminos (available at any grocery store and a soy sauce alternative)
-Heat a large skillet and add olive oil. Add garlic. Cook 2 minutes. Add tempeh and veggies. Cook for about 2 minutes and add everything else in no particular order. Yes really I just dump it all in and taste as I go. Stir and simmer covered for 5 minutes. Serve over greens and or rice! Squeeze a little lime on top and BAM! CURRY IN A HURRY!
JLud Tip: Make extra and freeze in individual portions. They make a great lunch to take to work.
